TASTE!  Weight Loss Salad recipe, Loaded with antioxidants and healthy fats… 

Time: 5-8 min. 

 

Ingredients:
  • 2 eggs,
  • 1 c. sliced cucumber,
  • 1/3 avocado,
  • 1/2 c. cherry tomatoes,
  • 1/2 c. sliced bell pepper,
  • Handful baby spinach,
  • Fresh arugula/rocket,
  • 1 tsp. olive oil,
  • A squeeze of fresh lemon juice,
  • Sea salt, cracked black pepper (to taste).

 

  1. Boil the eggs in a pot of water on the stove for 5-8
    minutes
  2. Slice the red bell pepper, cucumber, and tomatoes.
  3. Toss the chopped veggies, rocket, and baby
    spinach with fresh lemon juice, olive oil, sea salt
    and black pepper
  4. Top the salad with halved boiled eggs and
    avocado slices. Serve fresh and enjoy!
